These baked chewy donuts are delicious and a good alternative to deep fried donuts! The texture is unique and is sure to be a hit among friends and family.
If you love donuts but don’t love the excess grease that comes with the deep-fried version, you’ll definitely want to try these baked mochi donuts! Because the donuts are made with sweet rice flour, these donuts are more dense and chewy, differing from typical fried donuts which have a yeast-like or cakey center. As an allergy dietitian, I made these donuts for those who may have allergies to dairy, wheat, and/or nuts, as they are made with coconut milk, sweet rice flour, and do not contain tree nuts. (Do be aware that coconuts are sometimes classified as a tree nut).
The donuts can be topped with anything you prefer, but I decorated my donuts with 3 natural flavors: matcha, strawberry, and lemon. The donuts are beautiful and delicious, making them ideal for gifting!
What is sweet rice flour?
Sweet rice flour is ground short-grain glutinous rice and is high in starch, giving food a chewy texture. It is commonly used in East and Southeast Asian cuisines to make desserts and entrees. Sweet rice flour should not be confused with other flours such as glutinous rice flour or tapioca starch. A common sweet rice flour brands flour is Koda Farms, which can often be found in the International aisle and Asian grocery stores. Bob’s Red Mill also sells sweet rice flour.
