Because these bites are made with strained Greek yogurt, also known as labneh, much of the whey is removed during the straining process. This lowers the lactose content, making them easier to digest for people with lactose intolerance or sensitivity.
Labneh is a strained yogurt that originated in the Middle East. While it is traditionally enjoyed as a savory food, its mild, tangy flavor makes it equally delicious in both sweet and savory recipes. For this recipe, strained yogurt is essential. Using unstrained yogurt adds too much moisture, resulting in an icy texture instead of the creamy consistency that makes these bites so irresistible.
How to Strain Yogurt
Straining yogurt is simple and requires only a little patience. All you need is a bowl, a fine-mesh strainer, and a cheesecloth or paper towels. If you choose to use paper towels, you may prefer ones that are free of BPA and PFAS. The equipment below is all you need to create a simple yogurt-straining setup:
Thick and creamy yogurt bites coated in dark chocolate for a nutritious frozen treat that's great for snacking or dessert.
Ingredients
1 1/2cups whole milk Greek yogurt
liquid sweetener to taste (i.e. honey, agave, syrup) (optional)
1teaspoon spirulina or butterfly pea powder
1tablespoon strawberry jam
8ounces dark chocolate chips
2teaspoons coconut oil
Instructions
1
Combine the yogurt and liquid sweetener (if using) and separate the yogurt equally into 3 smaller bowls.
Add liquid sweetener if you want a sweeter flavor.
2
Add spirulina or butterfly pea powder to one yogurt bowl and mix.
3
Add jam to another yogurt bowl and mix. Leave the third yogurt bowl as is.
4
Place a strainer over a medium-sized mixing bowl bowl and put a cheese cloth or a large paper towel sheet over the strainer.
5
Add all 3 bowls of yogurt into the lined strainer, placing each color next to other, rather than overlapping the colors.
6
Wrap the cheese cloth or paper towel up and place a weighted item (such as a can of beans) on top. Place this setup in the fridge overnight or for at least 8 hours to strain the yogurt.
7
After 8 hours, remove the strained yogurt and gently combine the yogurt colors to get a swirl effect (optional).
8
Scoop ~ 1 1/2 teaspoon of yogurt and roll it into a ball. Place the yogurt ball on a baking sheet lined with parchment paper.
9
Repeat this process to make approximately 50 small yogurt balls.
10
Place the yogurt balls in the freezer.
11
In the meantime, combine the dark chocolate chips and coconut oil together in a bowl and microwave it for 30 seconds.
12
Stir the mixture and microwave for another 30 seconds. Keep repeating this process until the chocolate is smooth and melted.
13
Remove the yogurt balls from the freezer and coat the balls in the melted chocolate, one by one, and place them back on the parchment paper.
Do not add multiple balls into the melted chocolate at once as they will stick together.
14
Refrigerate the yogurt balls until the chocolate hardens and enjoy!
