These baked chewy donuts are delicious and a good alternative to deep fried donuts! The texture is unique and is sure to be a hit among friends and family.
If you love donuts but don’t love the excess grease that comes with the deep-fried version, you’ll definitely want to try these baked mochi donuts! Because the donuts are made with sweet rice flour, these donuts are more dense and chewy, differing from typical fried donuts which have a yeast-like or cakey center. As an allergy dietitian, I made these donuts for those who may have allergies to dairy, wheat, and/or nuts, as they are made with coconut milk, sweet rice flour, and do not contain tree nuts. (Do be aware that coconuts are sometimes classified as a tree nut).
The donuts can be topped with anything you prefer, but I decorated my donuts with 3 natural flavors: matcha, strawberry, and lemon. The donuts are beautiful and delicious, making them ideal for gifting!
What is sweet rice flour?
Sweet rice flour is ground short-grain glutinous rice and is high in starch, giving food a chewy texture. It is commonly used in East and Southeast Asian cuisines to make desserts and entrees. Sweet rice flour should not be confused with other flours such as glutinous rice flour or tapioca starch. A common sweet rice flour brands flour is Koda Farms, which can often be found in the International aisle and Asian grocery stores. Bob’s Red Mill also sells sweet rice flour.
Baked Mochi Donuts (Gluten-Free)

These baked chewy donuts with Asian-inspired flavors are dairy-free, nut-free, and gluten-free, perfect for anyone with those specific diet restrictions.
Ingredients

For Matcha Glaze (yields 3)
For Strawberry Glaze (yields 3)
For Lemon Glaze (yields 3)
Instructions
- Preheat oven to 350 °F.
- In a medium bowl, combine sweet rice flour, brown sugar, baking powder, and salt.
- In a large bowl, whisk coconut oil, egg, coconut milk, and vanilla extract together.
- Pour the wet ingredients into the dry ingredients and whisk until the batter is smooth.
- Lightly grease a donut pan with oil spray and pour the batter in each cavity to 3/4 full.
- Bake the donuts at 350 °F for 30-35 min.
- Once baked, remove the donuts from the pan and place them on a cooling rack.
- To make each glaze, whisk together the ingredients. Once the donuts are cooled, dip the donuts in each glaze, decorate the donuts, and allow the glaze to harden while the donuts are on a cooling rack. Enjoy the donuts once the glaze has hardened.
