High-Protein Spinach Artichoke Flatbread

Did you know that you can make delicious stuffed flatbreads in under an hour without any yeast? All you need are two ingredients, self-rising flour and Greek yogurt, and a little kneading power. The 2-ingredient flatbread recipe has been around for quite a while, and I’ve been using it as a quick bread recipe for over 15 years! While I love traditional bread-making with yeast, I often don’t have the time or energy to make a fully yeasted dough. Fortunately, the baking powder in self-rising flour is a great leavening agent that helps the dough rise. If you don’t have self-rising flour (like me), you can easily add baking powder and salt to all-purpose flour. The dough is then stuffed with a lighter spinach-artichoke dip made with Greek yogurt and low-fat cream cheese for an extra boost of protein.
When making the flatbreads, it’s important to avoid making the dough too thick, as this can inhibit proper rising. When done correctly, the final result is fluffy and elastic – though it won’t be quite as pillowy as a yeasted flatbread, it’s an excellent alternative nonetheless!

Directions

  1. Combine the dough ingredients in a bowl and knead for 2 minutes. Set aside.
  2. In a separate bowl, combine the filling ingredients. Set aside.
  3. Separate the dough into 5 or 6 equal pieces. Take one piece and flatten it out with a rolling pin. Add some filling in and seal the edges up in the middle to form a ball.
  4. Gently flatten the ball into a flatbread shape with a rolling pin. Repeat for the remaining dough and filling.
  5. Heat a non-stick pan over medium heat and pan fry the flatbreads on each side until golden brown with the lid on. It takes approximately 3 minutes on each side.
  6. Brush butter on the bread (optional) and enjoy!

Recipe Notes

  • Flatbreads can be frozen and reheated in the microwave or in the pan over low heat.
