Everybody knows that avocado toast is an excellent quick breakfast option that is not only satiating but also packed with vitamins and minerals. Although delicious on its own, avocado toast can easily be elevated with a variety of toppings such as smoked salmon, cheese, and egg. One of my favorite toppings is burst cherry tomatoes. While the combination of tomatoes and avocado is nothing new, cherry tomatoes are much sweeter than larger varieties, and bursting them unlocks their natural sugars, creating something that resembles tomato jam. The toast is finished with lemon zest and flaky salt, resulting in a dish that highlights "Salt, Fat, Acid, and Heat" — flavor elements that work together to make a great dish (shoutout to Samin Nosrat).
I love this recipe because not only does it come together in 15 minutes, it also boasts a plethora of healthy fats and fiber that increase satiety and antioxidants that help boost your immune system. It consists of all the components that I look for in a healthful breakfast.
What is "bursting"?
As the name suggests, burst cherry tomatoes are tomatoes that have split open so their juices spill out. To achieve this, roast or pan-fry the tomatoes on high heat to caramelize the skin on all sides. Once the skin is wrinkly and the tomatoes become limp, they may burst naturally, or you can manually burst them, exposing the silky insides which you will use as jam.
What bread do I recommend for this recipe?
The best bread for this recipe is a hard, rustic bread that can support the weight of the avocado and tomatoes. I recommend ciabatta, French, Italian, focaccia, or sourdough.

- Add 2 teaspoons oil or butter to a pan and cook the cherry tomatoes for 10 minutes over medium heat, flipping occasionally to allow the skins to blister. Season with a pinch of salt.
- Spread 2 teaspoons oil or butter on both sides of the bread slice and toast in the pan on both sides until golden brown.
- Mash avocado on the toast and top with cooked cherry tomatoes, lemon zest, and salt flakes.
