This is, without a doubt, one of the best sandwiches I have ever made, and you can easily make it too!

This sandwich, stacked with fluffy scrambled eggs, smoked sausage, sharp cheddar cheese, caramelized onions, and gochujang ranch on a pretzel bun is, without a doubt, one of the best breakfast sandwiches I’ve ever made.

Full credit goes to Eggslut, a restaurant known for its egg-centric dishes, for inspiring this creation. Their Fairfax sandwich is slightly different from mine – it skips the sausage and uses a brioche bun with sriracha mayo instead. While this recipe is simple and straightforward, it does require a bit of patience, as caramelizing onions takes about 50 minutes. To save time, consider caramelizing a large batch in advance and freezing the onions for future use.

This sandwich works so well because of its balance of textures – creamy eggs, a chewy pretzel bun, and melty, stringy cheese, and its bold mix of flavors: sweet onions, salty cheese, smoky sausage, and spicy gochujang ranch. Everything comes together beautifully, and every bite will leave you wanting more.

This Eggslut-inspired breakfast sandwich features fluffy scrambled eggs, smoky sausage, sharp cheddar, and sweet caramelized onions on a warm pretzel bun. Finished with a drizzle of gochujang ranch, it’s rich, savory, and perfectly balanced.

Instructions

  1. Heat oil in a skillet over medium heat and sauté onions for 5-7 minutes.
  2. Reduce the heat to medium low heat and add salt. Sauté for approximately 50 minutes, giving the onions a toss every 3 minutes or so.
  3. If the onions appear dry and have char, you can add splashes of water to deglaze the pan.
  4. In a small bowl, whisk together ranch and gochujang. Set aside.
  5. Slice the pretzel bun in half and toast in a pan until golden brown. You may add some butter to toast if desired.
  6. In a bowl, whisk together eggs, milk, salt, and pepper. Set aside.
  7. In a pan over medium heat, pan-fry the sliced sausages for 2 minutes. Turn the heat down low and add in the whisked eggs. Begin to stir the eggs continuously with a spatula for 1 minute. Add in the butter and stir continuously for 2 minutes.
    The eggs should look curdled and semi-runny. This is the consistency you want.
  8. Add in the green onions/chives and stir. Use your spatula to form the eggs into a circular shape, about the same size as the pretzel bun. Add the cheddar on top and place the lid on the pan. Turn the heat off and wait for the cheese to melt.
  9. To assemble the sandwich, spread the gochujang ranch on both the top and bottom pretzel buns. Add the egg and sausage mixture to the bottom bun. Top with caramelized onions and close the sandwich.
