If you love ramen broths, you can make this simplified soup in just 20 minutes without stewing any bones or aromatics.

This soup base is plant-based, but I chose to add meat and an egg for additional protein. If you are plant-based, you can omit these protein sources or substitute them with tofu, bean curd, or more vegetables.

You can also adjust the flavor of the broth depending on your mood. If you like it richer, a splash of soy milk or sesame oil can deepen the taste, while more chili oil will bring up the heat. Toppings like cilantro, scallions, and fried onions add texture and complement the bouncy noodles and silky. Instructions

  1. Add oil into a medium-sized pot over medium heat and sauté green onion whites and garlic for 30 seconds. Add miso and chili oil and and cook for ad additional 30 seconds.
  2. Add water and dashi granules in and stir the soup to incorporate the miso.
  3. Cover the pot and bring the soup to a simmer.
  4. Add in udon noodles, enoki mushrooms, leafy greens, meat, and crack the egg in the soup. Cover the pot and bring the soup to a simmer.
  5. Top the noodle soup with green onions and sesame seeds and enjoy!
