This healthful, nutrient-packed burrito bowl is simple to put together and keeps you satiated for longer!

I ate this burrito bowl for lunch and wasn’t hungry until late night!

These bowls are easy to meal prep, making it a great option for busy weekdays. It’s sort of like having a Chipotle chicken bowl at home, but with homemade ingredients, so you know exactly what goes into your food. I used the following ingredients in this bowl:

Pinto beans: High in fiber and protein and rich in antioxidants, which can help support immune health. They also support gut health and may help maintain healthy blood pressure and cholesterol levels.

Grilled chicken: an excellent source of protein with anti-inflammatory and bone-strengthening properties.

Guacamole: Full of micronutrients and healthy fats, including omega-3 fatty acids, which can support heart health and healthy cholesterol levels.

Pico de gallo: An excellent source of vitamins C and K, as well as antioxidants. These nutrients can support overall health and may help reduce the risk of chronic diseases, including heart disease.

Grilled corn: A good source of several B vitamins, which support brain function, cell growth, and the formation of red blood cells. Corn can be a nutritious way to incorporate B vitamins into your diet.

Brown rice: More nutrient-dense than white rice because the outer layer of the grain, which contains much of its fiber and nutrients, remains intact. The fiber can support digestion, gut health, and satiety and may also help maintain healthy blood pressure and cholesterol levels.

A Hearty brown rice bowl topped with chipotle-marinated chicken, beans, guacamole and more is the ideal high-protein lunch or dinner.

Instructions

  1. Add the chipotle peppers, garlic, cumin, onion powder, salt, pepper, onion, oil, and lime juice in to a food processor or blender and blend until a smooth paste forms.

  2. Add the marinade into a medium-sized bowl and place the chicken breasts in the marinade. Cover the bowl and place in the fridge for at least 2 hours.
  3. Wash and drain the brown rice two times and add the rice and water to a medium pot. Cover the pot and cook the rice over low heat for 40-45 minutes or until the rice becomes cooked and can be fluffed with a fork.
  4. Heat a grill pan over high heat and grill the marinated chicken for 5 minutes.
  5. Flip the chicken to the other side and grill the other side for 5 minutes.
  6. Measure the internal temperature of the chicken breast and make sure it reaches 165° Fahrenheit.
  7. Set the chicken aside and let it rest for 5 minutes, then slice the chicken into strips.
  8. Assemble the bowls with brown rice, chicken strips, pico de gallo, pinto beans, guacamole, corn, and cotija cheese (if using).
