Each oat cup firms up enough to be eaten by hand, making it easy to pack for on-the-go mornings and a great breakfast or snack option for kids. This recipe is naturally gluten-free and can easily be made plant-based using the substitutions included in the recipe notes.
Oats are one of my favorite budget-friendly, nutrient-dense ingredients because they are rich in fiber and provide important nutrients such as phosphorus, thiamine, magnesium, and zinc. The fiber in oats helps slow digestion, promotes fullness, and can help lower cholesterol by binding to it and supporting its removal from the body. For around $4, I can buy a 64-ounce container of rolled oats and make countless delicious recipes with it!

Honey Oat Cups with Yogurt

These sturdy oat cups are filled with yogurt, fruits, and other toppings for a wholesome breakfast.

Mix together oats, honey, coconut oil, and cinnamon in a medium bowl.

Transfer the oat mixture into a skillet over medium heat and stir continuously for 5 minutes.

Place 8 cupcake liners or piece of parchment paper into a standard-sized muffin tin.

Quickly divide the oat mixture evenly into the 8 cupcake liners and press down on the oat mixture with a spoon to roughly form a cup shape.Make sure to work quickly as the oat mixture hardens as it cools.

Place another cupcake liner or piece of parchment paper over each oat cup and press down on the oats to form the cup shapes furthermore.Press down firmly and pack the oats down tightly.

Place the muffin tin in the fridge and chill the oat cups for 20 minutes.

Take the muffin tin out from the fridge and gently remove the muffin liners from the oat cups.

Fill the oat cups with yogurt and top with fruits and other toppings of your choice.

Note
To make this vegan, substitute the honey with a thick liquid plant-based sweetener such as brown rice syrup and a plant-based yogurt such as cashew yogurt.
To make this dairy-free, substitute the Greek yogurt with a plant-based yogurt such as coconut yogurt.
Make sure to use certified gluten-free oats if necessary.
Cool and harden the oat cups completely before storing in an airtight container at room temperature for up to 5 days. It is important to cool them completely to prevent sogginess and bacteria growth.
